Lingonberry Semolina Porridge is a lovely dessert or breakfast in the fall and winter time. You can place white sugar with xylitol in this recipe. Finnish organic spelt gives its unique flavour to the porridge.
Lingonberry Semolina Porridge
- 1 l water
- 4 dl fresh or frozen lingonberries OR 2 tbs lingonberry powder
- 2 dl Semolina spelt flour
- 1 dl METTÄ Lingonberry Xylitol (if you’re stomach is very sensitive to xylitol as a sweetener, try replacing some of the xylitol with normal sugar)
- hint of salt
- milk or oat milk on top
Boil 1 l water. Add fresh or frozen lingonberries and boil for about 10 minutes. Smash the berries into a smooth texture with a hand blender. Add sugar, salt and the semolina spelt flour. Let sit and mix from time to time for about 20 minutes. Let the mixture cool and finally whip the mixture into a spongy whipped porridge. Enjoy with berries and for example oat milk or similar. Try also adding a vanilla bean or some vanilla sugar into the recipe for an extra sweet taste.
